Umm Umm Umm All-In-One Breakfast

Ok, so I tried this yesterday and it was so DELICIOUS that I got anxious and wanted to share but I didn't have any pics, so I made it again today and I took pics.
What is it? It is the most easy and complete breakfast you'll ever have!!!! I found the recipe at Blogilates' website, one of my favorites places to check. She calls it Berrylicious and I agree but, I think it should be call All-In-One Breakfast. Anyways, this is so easy to make, so practical and so amazing!
What you need?:
1 whole egg
1/4 c quick oats
5-10 frozen blue berries
1 tsp brown sugar

Put everything in a mug and stir/mix it up until it comes together.
Microwave for 1 minute and IF needed add 30 seconds until cook. Mine took exactly 1.5 minutes both yesterday and today. When done, put upside-down on a plate and devourer it!!!

Flour-less Pancakes!!!

Yes, you heard me!!! Flour-less Pancakes!!!! They are easy and DELICIOUS!! What you need:
1 ripe banana
2 eggs 
1 dash of cinnamon powder
smash the banana as much as you can

add the eggs

dash of cinnamon 

whisk

spray the flat iron and cook your pancakes, 1 minute for each side

and enjoy

Checking-In

Ok, so I lost the awful 3 pounds I gained last week plus 0.3 ounces, hahhahahaha!!! Yes, I am counting them in!!! Meaning that I am back to 161.2 pounds.
 I have decided to put in my workout at 5am instead of doing it later on the day, why? because I want to get it out of the way and be ready for the rest of the day. So far, so good. Loving my week, and yes I know it is only Monday.

Carb Free Cloud Bread

This is not a pretty picture but it helps to understand the recipe.
This "bread"( I made it more into "cookies") is perfect for those days that you need to eat fewer carbs but want to have the feeling of eating carbs.
It is super easy and yummy!!!!
Calories: 43.2
Total Fat: 2.8g
Sugars: 0.1g
Carbs: 0.3g
Protein: 3.7g
Serving Size: 1
Servings Per Recipe: 5

Ingredients

    • 3 eggs, separated
    • 3 tablespoons whole milk cottage cheese or 3 tablespoons cream cheese
    • 1/4 teaspoon cream of tartar
    • 1 (1 g) packet artificial sweetener

Directions

  1. Preheat oven to 300 degrees.
  2. Separate the eggs very carefully, there must be no yolk in the white.
  3. In one bowl, mix together the egg yolks, the 3 T. of Cottage Cheese OR Cream Cheese and the one packet of Sweetener until smooth.
  4. In the other bowl add 1/4 teaspoon of Cream of Tartar to the whites and beat the whites on high speed until they are fluffy and form nice peaks.
  5. Very carefully fold the egg yolk mixture into the egg whites until mixed, but try and not break down the fluffiness of the egg whites too much.
  6. Spray two cookie sheets with Pam or other fat-free cooking spray.
  7. With a large spoon, "scoop" the mixture into 10 even rounds on the sheets (about the size of the top-half of the McDonalds hamburger bun; roughly 3/4 inch thick and 4 to 5 inches across).
  8. Bake on the middle rack. Here is when you have to watch them, because the cooking time the same on any two batches. It is somewhere around 1/2 hour, but it could be less or more. You just need to watch them until them become nice and golden brown (again, the color of a McDonalds bun).
  9. Remove from the pans and cool on a rack or cutting board.
  10. While warm they are crumbly and similar to cooked meringue - but don't let this fool you! Once completely cool, seal them in a ziplock storage baggie or a tupperware over night. They will totally change their consistency, to something much more like bread - a softer texture that is nice and chewy. If you do not like softer chewy bread, then eat them as they are, nice and crisp.

That's the result of all the chocolate chip cookies, brownies, coke, chips, Cafe Rio, ice-cream, Nutella, movie popcorn, cherry popcorn, more coke....aaahhhhhh!!!!! pure JUNK FOOD. But is ok, taking some time off is totally fine, plus today is the beginning of a new week and I am going to redeem myself.

Fave Gadgets

Love my armband and earbuds. Found them at Wal*Mart for about $20, for both items. This see-through armband is also resistible to moisture and you don't need to get the device out to change music or apps. The earbuds stay in place, there's no need for adjustments at all, which I love. This are my running companions, without them I can't go for a run.

Beakfast Burrito

UUUMMMMMM!!!! this breakfast burrito is full of protein and low in calories: 190 calories, 11g of protein AND..... only 33g of Carbs!!!
Ingredients:
1 egg
chopped onion, pepper & tomato
salt & pepper to taste
 1-8" tortilla
1 slice american cheese
Scramble egg with onion, pepper & tomato, remove from pan and place tortilla on pan to toast both sides, when ready place cheese on tortilla & then the egg. Roll into a burrito and enjoy!!!!

340 Calories Tuna Salad

Oh that you are going to love this salad!!!!
It is ONLY 340 calories and FILLS YOU UP like there is no tomorrow.

Tuna Salad

1 can of tuna in water, drained
Chopped:
onions
tomatoes
cilantro
green pepper
fresh 1/2 lemon juice
and salt & pepper to taste
Mix everything together while microwave 2 flour tortillas for 2 minutes, to make them crispy (or you can broiled them also)
Eat the whole thing!!!! Did you see how many grams of protein???? And Carbs????? And as I said, it is ONLY 340 CALORIES!!!!!!

Checking in

I know I haven't logged in for a while but, I have to say that things are going great. I've been working on my state of mind and changing it for a better one. I am more active now than what I was a few weeks ago. I started at 171.9 pounds and today I weighed 168.4
This is a pic of me taken a week ago, I am HUGE, poor horse. Looking at how BIG I am makes want to workout hard.

Checking in

Well, it looks like when I am trying to "convince" myself of starting to take care of myself, you know, eating healthier and moving, my brain thought I was going to "diet" and I started to eat more junk food than any other day of the week. What's up with that? 
Isn't it that crazy???!!!! 
Well, thats exactly what we do to ourselves!!!! We consciously or unconsciously sabotage ourselves!!!!! But something I have learn in the long 10 year process of being in shape is, that everything starts with my absolute state of mind and how much I am committing to do it. It is more in my mind than in my strength or energy.  
I have heard that it takes 19 days to create an habit, 3 seconds to break a commitment, and about 500 hours to become an expert. BUT I KNOW by experience that 19 days is not enough. I have workout for 3 months straight and I have stopped. The only thing it kept me going for the 3 months was my state of mind. I wished I had create the habit but it didn't happened. 3 seconds to break a commitment!!!???couldn't be more true.
My check-in today is to report that I successfully moved (I am trying not to use the word exercise anymore because it makes my state of mind to freak out). Anyways, today I moved for over 3 hours straight while I was weeding, cutting trees and cleaning the yard. And it was hard work!!! I kept my heart rate on the range of 145-165 beats.

So...here we go AGAIN

 I know... I know this is the 3rd attempt but, third is a charm, right! It is 7:53pm in Utah and I was thinking why I haven't been able to accomplish my goal besides not doing any exercise and eating like an animal. Anyways, I want to feel & be healthy. So, I am committing to do the best for me and my health, plus I want a short hair cut, I need to spice it out for a while. I've been wearing this long hair for to long so I want to go from this:

and the only way I want to do it is being in a different shape. I want to lose some lb.'s and lots of cheeks. Wish me luck!
